K小姐閒時會整定D平時常用嘅食材~ 到煮野食嘅時候會快手好多架~ 今次我又整左【Ⓚ小姐。手切辣菜莆】喇~~ 難度只係一粒星...好易做~ 不過就係一D比較花時間嘅野喇~~~
呢個真係我身邊嘅人食過都話GOOD嘅~~ 相信大家有時係麵檔, 小餐廳都見過佢....
不過我就唔會用攪拌機做... 我喜歡用手切~~~ 因為手切會有大小不一~食落口感係唔同架~~食得出架!!!*
但係...唔係講笑~~ 整呢個都幾攰架!!!
做法超簡單....離不開個 "切" 字... 首先將菜莆洗淨切粒粒~~~ 唔好睇少呢個步驟... 一切最少都切半斤!!*
之後.. 就切蒜蓉, 乾蔥蓉~~~備用..
要先用白鑊烘下D菜莆至乾身...(要不停反炒~以免燶呀!!) 之後就落蒜蓉, 乾蔥蓉~~炒到香噴噴!!* (記得開抽氣扇..如果唔係好大件事...陣味有排唔散)!! 再落你自己喜歡嘅辣椒油(最好有油有渣) 食得好辣嘅朋友可以再加辣椒乾同指天椒~ 炒至乾身~可以加DD花雕酒~增加香味~~ 炒多5分鐘左右~加少少麻油~~~再炒3分鐘~就完成架喇~~~
唔食辣嘅朋友可以落完蒜蓉, 乾蔥蓉~~直接跳過辣椒步驟~加酒同麻油炒香就可以~~~
炒好之後~~攤凍~~就可以用個乾淨嘅樽裝起~~慢慢用~ **個樽一定要完全乾身呀~!!! 保存方法: 放唔放雪櫃都可以架~~
呢個Ⓚ小姐。手切辣菜莆...可以用黎做粥/湯麵/撈麵嘅佐料.. 好惹味架!! 我有時整菜莆蛋都會混入少少辣菜莆~~好味道!! 哈哈哈~~
